Custard Apple Bruschetta

Enjoy this simple yet impressive breakfast addition
- 2 slices plain sourdough, sliced on the diagonal
- 80 grams low fat ricotta
- 1 teaspoon maple syrup or honey
- ½ cup custard apple flesh
- ½ teaspoon cinnamon
- 1 tablespoon caster sugar
Combine the caster sugar and cinnamon. Set aside. Heat the grill. Toast the bread lightly on both sides.
In a small bowl combine the ricotta with the maple syrup or honey. Remove custard apple flesh, discard seeds.
Spread the ricotta mixture over the toasted bread slices. Top with fresh custard apple flesh. Sprinkle lightly with cinnamon sugar.
Place under grill until the sugar begins to turn golden.
